He attended the program back in 1992.
David was   vegetarian and an experienced chef at the time.
This is where he learned to make puff pastry but with butter.
He attended the animal ingredient intensive program to further grasp 
classic French technique to apply in Vegan cooking.

Many people would like to try Portabella Mushroom caps at home but
have no clue  as to the simple but important prep on these
Mighty Mushrooms.

First off unpack gently so as not to split.
Take a knife and remove the stem flat to the cap.
I prefer a non sharp/spreader to remove the 'gills'.
Scrape them off and discard.
Score the top of the Portabella with an X just slightly, 1/8" deep.

Arrowroot blended in warm Vegan stock
to stick these tasty burgers.
Oven browned in 350 oven. 
Turn at 15 minutes.

The vegan buns are fueled with V-8 Juice using it
 for half the liquid in the recipe.

Tofu,Spelt Flour,Vegan Beverage,Banana, melted Margarine and spices including 
a small amount of Turmeric for color. 
Tasty, held up well and was sturdy to produce in volume amounts.


The recipe in the cookbook is far lighter version than the thick  French Toast we served up at the restaurant.

Oats, toasted Coconut, Toasted Sunflower Seeds, Toasted Sesame Seeds,
Molasses, Sugar, Vegan Margarine and Coconut Oil, Maple Syrup. 
I often add a Powdered Spirulina and Powdered Vitamin C too.

A power packed bar for after my bike ride to the gym and a swim.

Baking Potatoes with Salt makes for a fluffier texture.

Pierce the Potato through several times with a knife.
Place on your a roasting vessel and pour salt around the Potato.

TIPS: add sliced Garlic to create another delicious dimension.
+Cut an inch deep crevice on top and stuff with sliced Garlic.

Add a light coating of Olive oil to the outside.

A very popular salad and will be on the menu our new location. 

It was fun watching how customers would use the modifiers to design their own by adding Avocado, Vegan Bakin',and one who always asked for a scoop of Almond Feta.   After close at 6pm I would have the time to go into the data base and view all the orders with   the creative add ons and try them myself.

No need for egg/factory farming for sticking flour when you have Flax Meal. 
Add 2 TBSP Flax Meal to about 1/2 C hot water and allow to sit for 5 minutes or more. 
This creates a wonderful gelatinous substance that will hold the flour/breading.



Use Firm Green Tomatoes

My farmer friend Allan loaded me up with some fresh picked Zucchini and it is  supreme quality.
Half are Quinoa filled and half with Italian style ground Seitan
 + Vegan Cheese, Red Sauce  and topped with Bread Crumbs

Cut Zucchini lengthwise in half. 
Scoop just enough to create a space for filling.

Raw Cashews need not be pre-soaked if using a Vitamix.
If using a food processor, S Blade, soak for 4 hours prior, blend all ingredients.

There is one specialty recipe of Seitan where we add
1 TBSP of Oil per 5 pound batch. That comes to about 5.7 grams fat

Here is a Seitan Loaf cooking in stock. 
This recipe has 1/3 Cup Kidney Beans added for added moisture hold and texture.
Add beans, spices, 2 tsp oil and 1/3 cup stock and process to blend with s blade.
Slowly add 3 cups of Vital Gluten until a a firm dough forms.
As usual knead, rest, knead, form, place in a loaf pan with stock, cover and bake  at 350 /1 hour, uncover, cook another 10. Banana-Carrot Pecan Bread
For most slightly sweet loaf breads a basic recipe of 3 C Flour,
2 Tsp BPowder and 1tsp B Soda,2 Tsp Salt, 2 tsp Cinnamon,

This dough was allowed to rise 3x in a long day.

Next they were browned in a medium heated skillet with cornmeal.( Farina is fine)
Then placed in a 225 oven for 20 minutes.


So enamored of them sitting in a row in the spring sun I neglected to photograph one sliced.

2 choices for the base of this easy dessert item
1. One Lb of Firm Tofu
OR
2. 1 1/2 C Raw Cashews, soaked 5 hours+, and blended
smooth with a little Safflower or Coconut Oil.

Place your choice of base  in a blender and add
2 tsp Oil
1/3 C Coconut, dried shreds
2 tsp Arrowroot Powder, Corn Starch or Flax Meal to firm
2 tsp Lemon Juice

This Stroganoff was a very popular lunch buffet at Veganopolis.
Simple Seitan, page 145 
Vegan Mushroom Gravy , page 97, with a little Fresh Basil added.
Asparagus was microwaved  2 minutes with a handful of water in a 
covered casserole dish.

Approx 30 Min including cooking time.
Yield : About a dozen 1 1/2" Balls
1 (15 ounce) can chickpeas (garbanzo beans), drained,
rinsed and medium boiled with one inch water above

One day while making Burger Buns I was enjoying a glass of V8 Juice.
"Hmmm..How about cutting the water in the recipe by 50% with V8?" I pondered.
Made them that way ever since. As a rule a wee bit of Salt and Sugar is added.

Try these for extra flavor:
2 to 3 tsp of Onion Powder and or 2 tsp Garlic powder give them a nice kick.

Toss to coat in a bowl.
Spread evenly on a lightly oiled pan
 Roast  in a 400 degree oven about 15 minutes
watching not to burn sugar.
Roast 1/3 raw Pecans the same way.

My fav mix is 2/3C White-Unbleached Spelt Flour to 1/3C Vital Gluten Flour 
Makes for a more firm and higher protein crust.  
A little sugar in the yeast/warm water mixture is a must.
The yeast needs the sugar to 'dine on' and activate to creamy.
