Vegan Creamy Cannellini Sauce for Pasta



Never cared for Alfredo Sauce even as a child.
Mac n Cheese from the box my Mother would make was okay because
it had very little dairy. Mostly chemicals and dry powders

Cannellini Beans make a nice thick sauce for pasta so who needs dairy?

If using canned, drain, rinse,simmer for 15 minutes in water or broth
just an inch above the beans
Drain,place in processor with raw or roasted Garlic,salt and white pepper
Add 1/4 plain Vegan beverage,veg stock or water..to desired consistency
Squeeze in some fresh Lemon Juice for the acid factor.
Blending to smooth while adding a little Olive Oil until shiny.
Pulse in some Italian Herbs

While I made the sauce a saute of Shallots, Garlic, Broccoli was going.
Tossed in some chopped Roasted Red Peppers
Added sauce to the saute, warmed to hot and bubbly
Added cooked Spelt Spaghetti, served with Moroccan Oil Cured Olives
