Let's make Vegan Tofu Scramble

Many people ask us
"Is Tofu Scramble good?. How do I make it?"

Yes it is delicious,versatile and a lean meal.
This is included in the Veganopolis Cookbook
Enjoy as a breakfast entree or in a wrap for lunch.

This is what I do when I am hankering for a good Tofu Scramble:
Drain and break apart a package of Firm Tofu into a bowl, set aside.
Measure and prep my ingredients:
Place these dry spices together in a small dish:
2-3 tsp Onion Powder ( to taste)
2 tsp Garlic Powder
2 tsp Turmeric
1 tsp Paprika
1 tsp White Pepper
1 tsp Salt
Pinch of Dry Mustard and Cayenne Pepper
Prep the following:
3 Shallots, chopped ( or 2 TBSP diced Onion)
1/2 C Red Pepper , diced
3 Garlic cloves, smashed/chopped
1/2 C Parsley,rough chop
1/2 C Vegan stock
2 TBSP Flax Meal
1/2 Lemon
OPTIONAL- 2 or so tsp Liquid Smoke, to taste
2 tsp Oil in a saute pan

Let the Scramble begin:
Add Shallots, Peppers to heated oil, cook for 2 minutes(soften)
Stir in Garlic for one minute
Add spices, stir and cook for one minute
Add a couple TBSP stock, heat to hot
Add crumbled Tofu, stir to blend well
Stir in Flax meal
Add another 2 TBSP stock, cover and simmer for about 4-5 minutes.
Remove cover and taste for salt.
Add Parsley to blend
Squeeze on Lemon juice and Liquid Smoke if using
Stir, heat for a minute or 2. Enjoy.

Another favorite:
Broccoli Florets, Sunflower Seeds and Carrot
Make a 'blanc' Tofu Scramble using the dry spices and stop there.
Keep in your frig to add vegetables throughout the week.
