Black Eyed Pea Breakfast Patties

We love Black Eyed Peas.
The Veganopolis 'Black Eyed Betty Salad' was quite popular and hopefully at our new restaurant.
A meal of a salad was crowned with Black Eyed Peas in our slightly sweet Basil Pesto,topped with Vegan Bakin' Bits.
Today I am making Chili with Kidney Beans and Black Eyed Peas, Kale and Roasted Cashews
I have enjoyed making Black Eyed Pea, VC Seitan Bakin and Greens Pot Pie with Creamy Cashew Gravy
A simple dish of Cooked Greens and Black Eyed Peas is okay by me.
I often add a tsp of Maple Syrup.

For the patties I drained and rinsed a can of Black Eyed Peas.
Cooked them with an inch of water over ,to boil for 2 minutes.
Rinse in cold water, set aside
Dice 2 tbsp Onion, 2 Garlic Cloves, 2 tsp Parsley chopped
Prepare 1/2 C Bread Crumbs or ground Crackers
2 tsp Liquid Smoke, or sub Hickory Smoke dry spice
1 tsp+ Salt, 1 tsp White Pepper,Cumin,Chili Powder
1 TBSP Ground Flax in 1 1/2 TBSP Hot water or stock-sub 2 TSP Arrowroot for Flax.
Finally smash in 2 tsp Oil
Allow mixture to set for 10 minutes.

Add any other extras you would like such as chopped Jalapeno.
Place all in a bowl and mash with a fork
Form into patties and brown.
