I have no problem with soy just also love this rich nut based sauce.

Layer of Spinach sauteed with Shallot and Lemon juice, Nutmeg
Also a layer of Simple Seitan, page 145,ground in processor,
sauteed to lightly brown adding Fresh Herbs, Fennel Seed.
Served with fresh Marinara
Savory Bread Pudding, page 103 with Leeks Mushrooms, Rosemary.
