Vegan Root Vegetable Casserole

 
















A recipe currently being fine tuned for the next cookbook.
Here we have Turnips, Parsnips, Carrots, Potatoes along with
Celery and Apple Slices.
Pecan Bits
All in a 2 Nut Sauce Base, stock, spices.
Topped with cooked Quinoa here as I always have
some cooked Quinoa about and ready to serve.
Hearty and delicious.

Vegan Pizza Roasted Vegetable Style

We made 2 pies the other day:


1. With Red Sauce, Vegan Mozz melts and store bought Vegan Pepperoni
2. Roasted Vegetable Pizza with Roasted Garlic Cloves, Spinach,Onions
Plum Tomatoes, Moroccan Olives, Fresh Oregano and Rosemary


This Roasted Vegetable Pizza was voted best of the two.
If you have no Vegan Cheese onboard fly the pie w/o vegan Cheese.
Or try the simple to create Cashew Ricotta, page 162, for a topping.
Drop by the tsp decorating the top layer prior to baking.

If you have Vital Wheat Gluten on hand add 2tsp to the flour for the dough.
We have found it makes for a firm and tasty crust + a protein bump.

Friday Chill Chili

Elements for Chili chillin' together.
Stray elements found while organizing the cooler.
5-Spice blend all ready and standing by to be added to intitial saute:
Onion, Garlic, 1/2 a Green Bell Pepper, sliced and diced.

+Add a little more Chili Powder and Cumin at the final simmer for bounce.

1 12 Oz Can Diced Tomatoes
2 Plum Tomatoes, quartered, roasted with Smoke Flavor
1 1/2 C Vegan Stock
1-Jalapeno Pepper, diced
1 medium Sweet Onion, diced
a few Garlic cloves, sliced
2 Pablano Peppers,roasted over flame,placed in a covered bowl
to steam off skin, chopped.
1/2 a Green Bell Pepper, diced
1 ear of Sweet Corn
2 Roadhouse Burger Patties -page 155, ground

Not pictured here:
Plum Tomatoes that were roasting in a 405 oven


Cookin' together to meld spices , 5 Min, then add canned tomatoes, stock or both
Add a TBSP of Smoky Barbecue Sauce for a twist.


Next Added:
12 oz can of Tomatoes with Jalepeno
Then
1 1/2 C Vegan stock with 1 heaping tbsp Hickory Barbecue Sauce

Simmer a few minutes

Added 2 Roadhouse Burger patties , Page 155
+Cut them into into strips with a Kitchen Shears, ground in Cuisinart
Saute to lightly brown with Whole Fennel Seed, add to final simmer.

Bring to bubbling, serve.

Baked Potato TIP




Baking Potatoes with Salt makes for a fluffier texture.

Pierce the Potato through several times with a knife.
Place on your a roasting vessel and pour salt around the Potato.

TIPS: add sliced Garlic to create another delicious dimension.
+Cut an inch deep crevice on top and stuff with sliced Garlic.

Add a light coating of Olive oil to the outside.
PREHEAT oven to 425 and bake for about 60 minutes.
Test: A small prep knife should glide through the potato: DONE.

This is a good time to use the oven for roasting Garlic, Tomatoes
Eggplant and other items that require a very hot oven.
Toss some Sweet Onion quarters in with the roasting vegetables.
Sprinkle with Olive Oil, Salt, Pepper and roast until slightly browned.

TIP+
Once vegetables are roasted place in a food processor with a a touch of Olive Oil,
Lemon Juice and dried herbs.
Taste test for salt, pepper, herb seasoning and adjust if needed.
To loosen viscosity or thin add a good vegan stock by the spoonful.
+Vegan stock is a good way of adding moisture without adding oil calories/fat.
We always keep a squeeze bottle of Vegan Stock/bouillon handy in the frig.

We added 'New York' after several regular airline pilots said they looked forward
to Portland stopovers to grab a few Veganopolis Reubens..
"I eat Beef and these taste better than my NYC Deli Reuben does."

Veganopolis Seitan Caesar Salad

A very popular salad and will be on the menu our new location.

It was fun watching how customers would use the modifiers to design their own by adding Avocado, Vegan Bakin',and one who always asked for a scoop of Almond Feta. After close at 6pm I would have the time to go into the data base and view all the orders with the creative add ons and try them myself.

Only element missing here is 'Rawmesan':
Soaked Cashews (4 hrs),, placed in a processor and blended with Fresh Lemon Juice, Salt and Nutritional Yeast to form a thick paste .
+ Pine nuts are also great and do not need soaking.
After blending spread thinly in a dehydrator until crumbly.
OR
Spread mixture on parchment covered baking sheets
and place in a 110 oven until dry and crumbly.
TIP+Stir in Herbs, or chopped Parsley if you like, post drying.

Cut into strips and pan brown.

RAW?
This dressing can be made raw by using soaked Cashews and blending with Olive Oil-cold pressed,Lemon, Garlic,Cracked Pepper, Braggs Apple Cider Vinegar or Red Wine Vinegar and Sea Salt and a dash of Flax Meal.
Season to taste. and enjoy!
