Thai Cucumber Salad


This is one of our top 5 all time favorite salads.
Satisfyingly crunchy, super fresh tasting, Cilantro spiked and nutrition rich.

Too late to sit and have a full meal after a load of prep so I whipped
up this salad in ten minutes.
After enjoying a bowl I felt well nourished.

ELEMENTS:
Cucumber halved then sliced in 1/4 inch thick half moons.
( Seedless or with, your choice)
Julienned Carrot
Red and Green Onion
Roasted Peanuts, chopped
Cilantro leaves
Seasoned Rice Vinegar ( Marukan-Orange Label)
+If using un-sweetened Vinegar add a little Maple Syrup or Sugar to taste
A dash of Sriracha Sauce-to taste and tolerance
Toss, garnish top with ground peanuts-done


Also added some thinly sliced Green Cabbage from a wedge I had on hand.

Optional add ins:
Black Sesame Seeds,Diced Bell Pepper, Ginger or Ginger juice,
cooked Quinoa in place of Peanuts are a few I have tried with success.


RED ONIONS
Increase circulation and relax muscles
Assist in good lung function
Are high in antioxidants
Bacteria fighting properties-like Garlic
High in chromium to assist insulin level along with
metabolizing fats and carbs.
Chromium assists in weight loss.

Most of all they taste fabulous!
