Vegan Fried Green Tomatoes


"Lets make some Fried Green Tomatoes vegan style"

No need for egg/factory farming for sticking flour when you have Flax Meal.
Add 2 TBSP Flax Meal to about 1/2 C hot water and allow to sit for 5 minutes or more.
This creates a wonderful gelatinous substance that will hold the flour/breading.

Use Firm Green Tomatoes
1/2 Flour,1/2 Cornmeal with added Cajun Spices makes a perfect coating.

Dredge in thickened Flax/Water mixture, toss in flour/cornmeal.
We used Safflower oil, heated to HOT first. Fry until golden

Served here with Veganopolis Remoulade Sauce:
Vegan Mayo, page 31, Ketchup, Horseradish,Mustard,Paprika,Salt
and a few other ingredients.

Veganopolis Remoulade on a very popular sandwich special.

Thai Cucumber Salad

This is one of our top 5 all time favorite salads.
Satisfyingly crunchy, super fresh tasting, Cilantro spiked and nutrition rich.

Too late to sit and have a full meal after a load of prep so I whipped
up this salad in ten minutes.
After enjoying a bowl I felt well nourished.

Cucumber halved then sliced in 1/4 inch thick half moons.
( Seedless or with, your choice)
Julienned Carrot
Red and Green Onion
Roasted Peanuts, chopped
Cilantro leaves
Seasoned Rice Vinegar ( Marukan-Orange Label)
+If using un-sweetened Vinegar add a little Maple Syrup or Sugar to taste
A dash of Sriracha Sauce-to taste and tolerance
Toss, garnish top with ground peanuts-done

Also added some thinly sliced Green Cabbage from a wedge I had on hand.

Optional add ins:
Black Sesame Seeds,Diced Bell Pepper, Ginger or Ginger juice,
cooked Quinoa in place of Peanuts are a few I have tried with success.

Increase circulation and relax muscles
Assist in good lung function
Are high in antioxidants
Bacteria fighting properties-like Garlic
High in chromium to assist insulin level along with
metabolizing fats and carbs.
Chromium assists in weight loss.

Most of all they taste fabulous!

Pickling Peppers-easy style

This bottle will be in the cooler about as long
as a jar of good pickles which don't last long.
For long term storage a full process is needed.

In this jar
Washed and sliced
Jalepeno Peppers, Banana Peppers, Carrots, Red Onion, 1 Bay leaf

Bring the following to boil then pour over your chosen peppers
in a 1 QT Ball Jar. The recipe below fills a 1 QT.
Turn few times and place in cooler.

Takes 5 minutes:
1+ 1/2 C White Distilled Vinegar
1 + 1/1 C Water
2 TBSP Sugar

While that comes to boil add these to the jar:
1 Heaping TBSP Black Peppercorns
1 + 1/2 TBS Coarse Salt
2 tsp Whole Coriander or Mustard Seeds
2-3 Cloves peeled garlic
1 Bay Leaf and or Dill Stems
( Optional: I had some fresh sweet corn
and added 2 tbsp un-cooked corn off the cob)

Vinegar? Water Boiling?
Place jar filled with sliced vegetables and spices in sink
and pour thevinegar/water mixture into jar.
Close, turn a few times, place in cooler.
Allow to sit for 5 days before enjoying for best results.
Use up within 3-4 weeks time.

Good addition to Vegan Dogs,Roasted Seitan Slices Sandwiches
or just as a condiment for a Mexican Style meal.
I have enjoyed this condiment as a side with a good Vegan Chili.
... Of course the Chili had Roasted Pablano Peppers.

Stuffed Zucchini the Vegan Way


My farmer friend Allan loaded me up with some fresh picked Zucchini and it is supreme quality.
Half are Quinoa filled and half with Italian style ground Seitan
+ Vegan Cheese, Red Sauce and topped with Bread Crumbs

Cut Zucchini lengthwise in half.
Scoop just enough to create a space for filling.
In that groove brush a thin layer of Red Sauce first.
Then add a layer of cooked Quinoa or chopped Seitan
Then a layer of your favorite Vegan Cheese, Cashew Cheese or Almond Feta
Top with Seasoned Bread Crumbs and bake cobered for 15 minutes at 395.
Remove cover aand bake another 30 minutes.

Seitan Italian Style-Rough chop some Simple Seitan in to cuisinart,
add a few garlic cloves and Italian Herbs.
Remove from cuisnart and add 2 tsp Fennel Seed, whole
Quinoa was simply cooked in Vegan Boullion.
For more crunch add a 1/3 C chopped Cashews

Other fillings
The delicious store bought Vegan Sausage Gimmee Lean would be excellent.
First saute to slightly brown Gimmee Lean with a little Onion and some Whole Fennel seed.

Middle Eaastern Style:
Roasted Chick Peas and Cous Cous would also be delicious in place of Seitan
Try using Mint and other Middle Eastern Spices instead of Italian
Garnish with Lebanese Garlic Sauce thickened with Tahini and loaded with Smoked Paprika

Assembly: Bread crumbs will be added once the foil is removed mid bake.
In this assembly I used Almond Feta spiked with Sun Dried Tomatoes instead of Vegan Melt Cheese

Vegan Savory Bread Pudding

A very popular and signature Veganopolis item, page 1-3.
Served every Saturday Brunch with plenty of pans prepped
to hit the oven as the
previous were depleted by
happy and sated

Prep ingredients, assemble, bake, enjoy : )

Only ingredients missing here are stock to soak stale cubed bread in along with
Parsley finish garnish.
We decided to add a handful of large, roasted Cherry Tomatoes.
Blended them in to the sauce.
Customize yours : Olives,Smoky Pecan Bits, Spinach, Sun Dried Toms , etc.

Assembled and ready to bake at 365 for 45 minutes to until slightly browned atop.

Vegan Tofu Scramble and Blueberry Vegan Coffee Cake

Once a week I prepare a 'blanc' Tofu Scramble base to add new or leftover ingredients as the week moves on.
See the Veganopolis Cookbook for our TofuScramble recipe , page 108.
This way I change it up daily.
What I found to add:
A few Sun Dried Tomatoes in the bottom of a jar, Moroccan Oil Cured Olives,
a handful of Lemon Asparagus from a dinner the previous evening, Parsley,
Oregano,Garlic,Lemon Juice.

David enjoyed it at lunch in a wrap with Spinach.

Blueberry Coffee Cake with Vegan Cream Cheese

Using the Veganopolis Muffin recipe for the cake portion along with a TBSP of Flax Meal.
The batter is poured into a round pan and topped with a layer of Blueberries.
I prefer moist coffee cake so I added a little water to loosen the batter.
Should be barely pourable.
Once the Blueberries are on add pinches of Vegan Cream Cheese to about 1/2 the amount of Blueberries then top with crumble mixture.
Bake at 350 for approx 25-30 minutes.

Crumble is comprised of Flour,a little less Brown Sugar. Stir to blend.
Cut in Vegan Margarine w/fork or use hands to achieve a crumbly texture.
Vegan Margarine amount is half the Flour portion.
I often add a little Vanilla Extract to this topping.
An Orange was handy so squeezed a few tsps of OJ into the topping.
There are 2 other pinches of spice that bounce the flavor that will be revealed in the next cookbook.

Cashew Ricotta
would also be wonderful in place of the Vegan Cream Cheese because it cooks well in baked items as well. Cashew Ricotta , page 162.
