Vegan Chorizo

Whipped up a batch of Vegan Chorizo with a few Roadhouse Burgers I had
sitting the cooler. Roadhouse Burgers page 155


Mis En Place
Fennel Seed,Cumin,Ground Oregano,Chili Powder,Annatto, White Pepper,Salt
For Saute: Chopped Shallot, 2 Garlic cloves , crushed
Apple Cider Vinegar and a few pinches sugar

Using kitchen shears I cut the Roadhouse Burger patties into chunks then ground in a cuisinart with s blade






FENNEL SEED: breaks up in cuisinart so always add post blender
Fennel is added to most traditional sausages and adds a distinctive flavor

In a 100+ year old cast iron sweetheart:
Sauted chopped shallot and garlic for a minute, added dry spices to 'cook'
them for a few minutes
Add chopped seitan along with apple cider vinegar and a little water or stock
Simmer half covered about 5 minutes, serve
+ To this batch I added a heaping handful of Vegan Queso Melt Shreds.
