Impress yourself and guests with these delicious
5 Minute Chocolate Baubles
9-10 Baubles
Start to finish 5 minutes
Place in Vitamix or Food processor
1 Cup Dates, dried chopped (knife check for pits)
NOTE:
Made this recipe 2 day later w/o Walnuts and liked them better. More like a truffle
1/3 C Coconut, shredded and unsweetened
1/3 C Cocoa Powder (non alkaline is best/natural)
1 tsp Salt
1/2 tsp Cinnamon
1/4 tsp Cayenne ( enhances Cocoa)
1-2 TBSP Water for blending
2 tsp Instant freeze dried coffee
Blend in a food processor or Vitamix just to fully blended
Form into balls Roll in Coconut, chill
Enjoy!
Either would be fun rolled in colorful Vegan Sprinkles
RAW:Raw Cocoa is available at natural food stores
PB Baubles
Grind to fine: 1/3 C Roasted unsalted Peanuts, 1/3 C Quick Oats, Add 1 C of Dates, pitted, chopped, 1/3 C Peanut Butter, 1 TBSP Maple Syrup, Salt, Vanilla Extract,Pinch of Cinnamon and my secret spice too. Not telling.
Add water processor slowly by the TBSP to bring together blending ingredients.
Roll in Cocoa Powder,Chopped Peanuts, Coconut or al1 3. Cocoa Powder first
TIP: Add 2-3 tsp of Spirulina for Green Powered Balls
The above recipes are fun for kids to create. It will ntroduce them to using Dates instead of Sugar.
DONUT CAKES
From a recipe in the Vitamix Blender cookbook upgraded to animal free.
Result: Closer in texture to a Donut than the usual dimensional muffin.
And not fried but baked.
I modified the recipe and used thickened Flax Meal in water instead of egg.
Also blended in 4 Strawberries with the 1/2 C Vegan Beverage
Frosting is my Cashew Cream Cheese, Almonds and Dandies.
Dandies Vegan Marshmallows are made in Chicago by the Teese Vegan Cheese people

Yields 8 Donut Cakes
In the Vitamix
1/2 C Vegan Beverage plain or a favorite flavor
1/2 TBSP Flax Meal in 1/4 C Hot Water-let site 5 min
1/3 C Vegan Margarine-melted ( sub Coconut Oil)
2 tsp Vanilla Exrtact
1/2 C Sugar + 1 TBSP Maple Syrup or Raw Agave
Blend for 45 seconds on high
Add the blended mixture to these dry ingredients
1 1/2 C Flour
1 1/2 tsp Baking Soda
1/2-1 tsp Salt
Stir to blend and pour batter into muffins cups.
Bake @350 approx 20 minutes
Options: Add Banana Flavor,Lemon Flavor, Shredded Coconut, Shredded Carrots, Walnut pieces, etc.
Non liquids are stirred in to batter prior to pouring.
With this basic recipe the variations are endless.
