Dandelion, Apple, Walnut Salad
All these items were available in the kitchen so I tossed together a quick salad.
Dandelion Salad with Braeburn Apples, Smoked Walnuts, Dried Cherries or Cranberries
Dressing:Whisk up Grapeseed or Olive, 1/2 Seasoned Rice Vinegar,1/2 Apple Cider Vinegar, 2 tsps chopped Shallot,1 tsp Sugar or Maple Syrup to taste, pinch Dry Mustard, Sea Salt
Slice Apples , sprinkle with Lemon Juice. Tear Dandelion into small pieces,
Rough chop Walnuts, add dried fruit and toss with dressing.
We prefer our dressings tangy and blend closer to 1/2 Oil/1/2 Vinegar instead of the classic 2/3 Oil to 1/3 Vinegar.
Options abound with Greens: Use a Nice Boston or Leaf Lettuce.
Kale can be used uncooked, softened after marinating in Lemon, Lime, Orange juice.
Kale scissored into 1/2 inch pieces is best for this recipe.
