Chocolate Baubles , PB Baubles and Donut Cakes

Impress yourself and guests with these delicious
5 Minute Chocolate Baubles

9-10 Baubles
Start to finish 5 minutes
Place in Vitamix or Food processor
1 Cup Dates, dried chopped (knife check for pits)
1 Heaping CUP Raw Walnuts
Made this recipe 2 day later w/o Walnuts and liked them better. More like a truffle
1/3 C Coconut, shredded and unsweetened
1/3 C Cocoa Powder (non alkaline is best/natural)
1 tsp Salt
1/2 tsp Cinnamon
1/4 tsp Cayenne ( enhances Cocoa)
1-2 TBSP Water for blending
2 tsp Instant freeze dried coffee

Blend in a food processor or Vitamix just to fully blended
Form into balls Roll in Coconut, chill
Either would be fun rolled in colorful Vegan Sprinkles
RAW:Raw Cocoa is available at natural food stores

PB Baubles
Grind to fine: 1/3 C Roasted unsalted Peanuts, 1/3 C Quick Oats, Add 1 C of Dates, pitted, chopped, 1/3 C Peanut Butter, 1 TBSP Maple Syrup, Salt, Vanilla Extract,Pinch of Cinnamon and my secret spice too. Not telling.
Add water processor slowly by the TBSP to bring together blending ingredients.
Roll in Cocoa Powder,Chopped Peanuts, Coconut or al1 3. Cocoa Powder first
TIP: Add 2-3 tsp of Spirulina for Green Powered Balls

The above recipes are fun for kids to create. It will ntroduce them to using Dates instead of Sugar.

From a recipe in the Vitamix Blender cookbook upgraded to animal free.
Result: Closer in texture to a Donut than the usual dimensional muffin.
And not fried but baked.

I modified the recipe and used thickened Flax Meal in water instead of egg.
Also blended in 4 Strawberries with the 1/2 C Vegan Beverage

Frosting is my Cashew Cream Cheese, Almonds and Dandies.
Dandies Vegan Marshmallows are made in Chicago by the Teese Vegan Cheese people

Yields 8 Donut Cakes

In the Vitamix
1/2 C Vegan Beverage plain or a favorite flavor
1/2 TBSP Flax Meal in 1/4 C Hot Water-let site 5 min
1/3 C Vegan Margarine-melted ( sub Coconut Oil)
2 tsp Vanilla Exrtact
1/2 C Sugar + 1 TBSP Maple Syrup or Raw Agave
Blend for 45 seconds on high

Add the blended mixture to these dry ingredients
1 1/2 C Flour
1 1/2 tsp Baking Soda
1/2-1 tsp Salt

Stir to blend and pour batter into muffins cups.
Bake @350 approx 20 minutes

Options: Add Banana Flavor,Lemon Flavor, Shredded Coconut, Shredded Carrots, Walnut pieces, etc.
Non liquids are stirred in to batter prior to pouring.

With this basic recipe the variations are endless.

Raw Corn Tortilla Chips

Nutritional benefits of Raw Corn.

This is what was uncooking in the kitchen yesterday.
Raw Tortilla Chips,Salsa and Cilantro Cashew Cream.
Raw Almond Pate would be a nice replacement for Cilantro Cashew Cream.
I once found an Almond Pate recipe from a 1973 London restaurant listed online.
Find our on page 147 of the cookbook.

I decided to make my own raw tortilla chips after enjoying a delicious raw meal at my favorite downtown Chicago vegan stop.
RAW at the French Market in the train station at 131 N. Clinton.
Phenomenal seasoning, presentation, quality in the variety of packaged meals offered
M-Sat at RAW.
Don't miss their amazing raw desserts and cookies to finish the meal superbly.

This is how I went about making mine yesterday after reviewing a few recipes.
This recipe filled 3 dehydrator sheets worth or 2 cookie sheets worth.
These chips are a very filling snack.

In my Vitamix (or food processor)

First I ground 1 C Raw Pepitas to meal (Pumpkin Seeds) in the Vitamix
Then added:
Raw corn stripped from 6 ears
1 Red Bell Pepper,seeded and sliced into strips
1 medium Yellow Onion, diced
1 Garlic clove, smashed
juice of 2 limes
1 tsp Chili Powder
1/2 tsp Cumin
1 tsp Vulcan Fire Salt
or 1 tsp Salt plus 1/4 tsp Cayenne

I had a half of peeled Carrot handy so I sliced it and added it for
flavor and color.
Processed the above to blend into a thick meal.

Placed meal in a bowl and added 2 Jalapeno peppers, seeded and diced fine.
Jalapenos around here have been very mild so 2 worked fine.
I was concerned about the chips being too brittle and falling apart
so I stirred in 2 tsp Flax Meal and 2 tsp Olive oil

28 hours later

Spread thinly and evenly on parchment paper on 3 levels of a dehydrator.
Set at 115 to crisp for 24+ hours.
Check after that amount of dehydrator time by cracking a corner.
I also tried a half a cookie sheet in my convection oven.
300 degrees for 30- 45 min.

That starter plate was enjoyed with this Seitan Taco Platter.
These corn Tortilla were purchased at one of our many neighborhood Tortilla manufacturers: Sabinas, Chicago

Seitan Loaf Cooking

Here is a Seitan Loaf cooking in stock.
This recipe has 1/3 Cup Kidney Beans added for added moisture hold and texture.
Add beans, spices, 2 tsp oil and 1/3 cup stock and process to blend with s blade.
Slowly add 3 cups of Vital Gluten until a a firm dough forms.
As usual knead, rest, knead, form, place in a loaf pan with stock, cover and bake at 350 /1 hour, uncover, cook another 10. You may add a Bay Leaf, carrot and shallot to pan for flavor.
Spices used: Paprika, Cumin, Ground Oregano, Mesquite Powder White Pepper, Sea Salt

Easily sliced for sandwiches, sliced and pan cooked for Seitan Bakin',
ground in a processor to create a ground for a pasta topping, tacos, in tofu
scramble or any item a ground protein is used.

Vegan Pizza


This was lovely PAIRED with the Dandelion Apple Walnut Salad.
Spelt Crust Pizza with a little Vital Gluten added to dough
Fresh Pesto,New , Mini Potatoes, Shallot slices, Garlic slices
Black Moroccan Olives.

Almond Feta would add be a nice addition
Soak 1 C Raw Almonds overnight
Drain , rinse, process w/salt, a little Lemon Juice or Apple Cider Vinegar
to taste. Add a little Dry Italian Herb Blend if you like.

Dandelion, Apple, Walnut Salad


All these items were available in the kitchen so I tossed together a quick salad.
Dandelion Salad with Braeburn Apples, Smoked Walnuts, Dried Cherries or Cranberries
Dressing:Whisk up Grapeseed or Olive, 1/2 Seasoned Rice Vinegar,1/2 Apple Cider Vinegar, 2 tsps chopped Shallot,1 tsp Sugar or Maple Syrup to taste, pinch Dry Mustard, Sea Salt
Slice Apples , sprinkle with Lemon Juice. Tear Dandelion into small pieces,
Rough chop Walnuts, add dried fruit and toss with dressing.

We prefer our dressings tangy and blend closer to 1/2 Oil/1/2 Vinegar instead of the classic 2/3 Oil to 1/3 Vinegar.

Options abound with Greens: Use a Nice Boston or Leaf Lettuce.
Kale can be used uncooked, softened after marinating in Lemon, Lime, Orange juice.
Kale scissored into 1/2 inch pieces is best for this recipe.
